We don't strip the branches. Our pickers are trained to select only the red cherries. This manual selection process ensures that no unripe beans taint the batch, providing the foundational sweetness of our cup profile.
Within 6 hours of harvest, cherries are pulped to remove the skin. We use eco-friendly pulpers built by a nearby farmer, ensuring the process is entirely sustainable. These machines minimize water usage while ensuring the mucilage is preserved for the critical fermentation stage.
Finally, beans are brought to our propety where we spread them on the ground evenly. They are raked constantly for even drying under the Indian sun until they reach exactly 11% moisture content.
We work with expert roasters in Coorg and Bangalore who have been roasting for generations. We roast in small batches to unlock the bean's potential. By carefully controlling the heat curve, we preserve the delicate acids while developing the rich body and sweetness that defines our signature profile.
